Glasgow bakery Cake, which is owned by fine foods wholesaler Lomond, has launched a range of cocktail-themed goods.

The products are completely free from alcohol and made with 100% natural flavouring. Inspired by classic cocktail combinations, the triple-layer cake range is available in four flavours:

  • Strawberry Bellini –a three-layered sponge is filled with jam and strawberry and sparkling wine-flavour buttercream, topped with buttercream and dried strawberry sprinkles.
  • White Russian – a vanilla and chocolate marble cake, layered with chocolate and cream liqueur flavoured buttercream, topped with a layer of flavoured buttercream and chocolate shavings.
  • Blueberry Mojito – a sponge dotted with candied blueberries and layered with blueberry compote and blueberry and mojito-flavoured buttercream, topped with blueberries and buttercream.
  • Gin, Lemon and Lime – lemon curd and lemon and gin-flavoured buttercream sandwiched in between lemon sponge, topped with buttercream and lime zest.

The idea for the cocktail cake range came from Lauren Henderson, Cake’s bakery manager, who wanted to create something special for her sister’s engagement party. Henderson worked with an all-natural flavouring company to create a variety of cocktail-themed cupcakes.

Following the success of the cakes at the party, Henderson decided to upscale and launch them on a wholesale basis.

During last month’s launch week, the cocktail cakes sold four times the expected amount, said Henderson.

“We knew they’d sell quickly, but we’ve been staggered by their popularity,” she added.

The cakes are available frozen and are pre-portioned into 14 slices to reduce wastage. All are made by hand and packaged in 100% recyclable packaging.
