Bakery ingredients manufacturer Bakels has unveiled four new vegan fillings.

The bake-stable fillings are available in lemon, orange, chocolate and caramel. Ready-to-use, bakers can inject them into muffins and doughnuts or use them to finish cupcakes and small fine sweet goods.

The freeze-thaw stable fillings deliver a smooth, short texture with rich flavours, said the company.

Interest in veganism has increased seven-fold in the five years to 2019, according to analytics company Google Trends. Citing Mintel data, Bakels said 52% of cake eaters and buyers prefer to eat premium products less often, rather than standard ones more often.

The fillings launch follows the roll out of Bakels’ Multimix Vegan Cake Complete in 2019, a cake mix with a vanilla flavour, only requiring water and oil. 

The Bakels vegan range now includes nearly 100 products, comprising cake mix, toppings, ready to use sweet glazes, pastry improvers, release solutions and doughnut concentrates.
